Uses: raw on freshly baked bread, ideal on bruschetta, legume soup and grilled buffalo meat. Excellent on typical very structured winter dishes 

Flavor/Aroma: Dense, full-bodied, full and enveloping with notes of fresh herbs, spicy and bitter quite pronounced. Fresh and intensely fruity with the marked characteristic notes of freshly produced oil, freshly cut grass, aromatic fresh herbs, artichoke and green almond

The family Cutrera have been tending and cultivating olive trees since 1906 in Chiarmonte Gulfi, in the southeast area of Sicily. The descendants of the patriarch, Giovanni Cutrera, founder of the first mill are carrying on that tradition today. His youngest son, Salvatore, with the help of other family members manages the largest and most modern mill in all of Sicily.
