Uses: Perfect with tomatoes, artichokes, grilled vegetables, legumes, blue fish, and white meats. Excellent raw and outstanding also when used in cooking.

Grilled or roasted red meats- Ribeye, sirlion or grilled streak just before serving enhances the meat with elegant bitterness, green notes and a refined peppery finish

Roasted or grilled vegetables - eggplant, artichokes, green asparagus, pumpkin or peppers. Picual enhances their vegetal character and aromatic depth.

Creamy legume dishes - Chickpea puree, lentil stews or white bean cream. The oil adds freshness and aromatic structure.

Soups and warm vegetable creams - Such as asparagus cream or artichoke soup. Add the oil just before serving.

Oily fish - Tuna, mackerel, sardines or bonito. The balance between bitterness contrasts beautifully with the natural fat of the fish.

Aged cheeses - Pecorino, Parmigiano Reggiano, Grana Padano or other sheep-milk cheeses.

Artisan bread or sourdough - Simply with a pinch of sea salt.

Flavor/Aroma:  On the palate, it is full and consistent, with a firm yet harmonious bitterness and spiciness, evoking arugula and green peppers. The finish is long, clean, almondy, and pleasantly balsamic. Elegant and persistent.

On the nose, it reveals an intense green fruitiness with notes of tomato and tomato leaf, freshly cut grass, green almond and banana, with hints of artichoke and aromatic herbs.
