Extra Virgin Olio by Madge & Louie's feel fortunate to be able to bring two (2) of Olio Di Dievole's award winning extra virgins, the 100% Italiano Extra Virgin Olive Oil and the 100% Italiano Monocultivar Coratina Extra Virgin Olive Oil, here to our discerning clientele.  The olive mill, located in Pianella, in the heart of Chianti, pays meticulous attention to every detail of the milling process.  The olives are picked and "pressed" within hours and immediately filtered after the extraction process.  The oils is then stored in stainless steel, away from light and oxygen, and in a temperature controlled state of not more than 22 degrees C.  The pressing speed, crushing, exposure to oxygen and temperatures are all monitored carefully and adjusted for different "batches" and cultivars.

All this extra care and attention will yield extra virgin olive oils from Dievole with superior freshness, aromas and pungency which will last for as long as possible.
