Uses: Best on poultry, fresh cheese, ideal on shellfish appetizers, steamed beans, tomato salads, marinated amberjack and spelt soups. Excellent in artichoke risotto, stewed prawns, with baked turbot and baked rabbit.
Flavor/Aroma: Full and elegant, with tones of chicory, lettuce and hints of sage, black pepper and green almond.Robust bitterness and well-balanced strong spiciness. Starts ample and rotund, rich in vegetal hints of artichoke and wild thistle, accompanied by aromatic notes of mint and rosemary.
