Flavor/Aroma: This really was an extraordinary discovery for me and a confirmation of just how varied and fascinating Italian olive varieties can be. The first scents are of green leaves and nuts and a hint of raw peas and fava beans. In the mouth these last two almost explode in their intensity. There is a touch of raw cabbage which gives it a little punch but the bitterness is quite soft. The finish maintains the distinct flavour of peas picked in the garden along with freshly cut grass and lettuce. Intense golden yellow with shades of warm green to the eye.
