Uses: It is recommended of fish dishes (especially raw), beans, risottos, white meats, fresh cheeses and salads.
Flavor/Aroma: Medium-intense green fruit, round and full with hints of tomato and artichoke leaves. On the plate, the smell of tomato presents itself, a very light but sharp spicy bitterness that increases during tasting and persists for a long time.
