Uses: “It is perfect for salads and pinzimonio (dip for crudités), shellfish dishes, vegetable soups but in general it is very versatile in the kitchen.”
Flavor/Aroma: Quite an intense, bright nose: raw artichoke, leaves, escarole, lettuce - all very fresh. In the mouth there is an intriguing flavour of pine nuts and something balsamic. The bitterness is gentle while there is slight green banana astingency. Again we sense leaves and even bay leaves. In the finish there are green almonds and even a slight wasabi-like tingle in the nose.
